Pulka, also known as phulka, is a type of Indian flatbread made from whole wheat flour.
The dough is rolled into thin circles and cooked on a hot griddle until it partially puffs up, then finished directly over an open flame, causing it to puff fully. This results in a soft, light, and slightly charred bread. Pulkas are typically served warm and are a staple accompaniment to various Indian curries and dishes.
